Course overview
The world’s luxury yachts provide the perfect environment in which to deliver the ultimate standard of service, often in the world’s most glamorous locations. This programme prepares you with the skills needed to excel in this environment, together with the essential STCW95 safety training for work onboard. You will also gain valuable on-the-water experience introducing you to nautical terminology and safety procedures.
The course also teaches a repertoire of delicious meals to impress, and will improve your confidence and enjoyment when catering for guest and crew. With instruction from expert chefs and professional yacht crew, the programme provides a sound knowledge in basic cookery and preparation skills.

- Personal presentation, professional etiquette and protocol
- Table management, placement and settings
- Styles of service, courses and order of service, buffets
- Yacht steward style
- Bar tending and wine appreciation, including product knowledge of wines and ports and cigars
- Understand the standards required for catering on yachts
- Learn how to menu plan and provision for long passages
- Develop your knowledge of essential food hygiene and gain tuition in professional catering
- Learn how to make a wide selection of seafood dishes
- Other useful skills – bread making, carving joints, jointing a chicken, barbeque techniques, galley equipment
- Practical sessions making canapés and salads and simple mouth-watering desserts
- Menu planning and provisioning, including stowage, packing hazards, international regulations and dietary requirements
